The Washed Process: The “Less Pulp, More Punch” Approach
Washed coffee goes on a journey that’s all about letting the bean shine solo. After being harvested, the cherries are run through a milling machine that strips away the pulp, leaving just the bean. Then it’s time for a water bath where the beans are fermented to break down the remaining mucilage.
After fermentation the seeds are rinsed and then dried. Depending on the size of the farm, the seeds may be allowed to dry under the sun on a brick patio or with a mechanical dryer.
